Michel's Gluten Free Muffins 

Taste more like Cupcake

They are Delicious and Healthy

Chocolate and Carrot

Makes 18 muffins 

Half Chocolate and Half Carrot Muffins 

1 1/2 cup almond flour

1/2 cup coconut flour

2 teaspoons baking powder

1/2 teaspoon salt

2/3 cup butter

1/2 cup  organic cane sugar

1/2 cup milk or milk of your choice 

4 free range eggs 

5 tablespoons of vanilla extract

Mix butter and sugar

Add one egg at a time and blend in

Add milk or milk substitute  and vanilla extract, mix well

Pour dry ingredients into mixture 

Add dark chocolate chips (one cup) and 2 tablespoons of Fry's cocoa

using  half the muffin mix.

​

Carrot Muffins

Grate 2 carrots with the remanding mix you can also add zucchini if  you want.

 

Carrot Zucchini Muffins

2 small peeled and grated zucchini and 2 medium carrots

Bake at 350 for 30 mins.

Her clients are offered herbal tea and one of her husband's healthy gluten free organic muffins, cinnamon or chocolate. 

Try cinnamon or cinnamon apple raisin muffins. Delicious! Instead of chocolate or carrot added to half the mixture: 

2 Tablespoon of cinnamon or you can add less

1/2 a large organic apple grated

1/2 cup of organic raisins

Cinnamon has anti-inflammatory properties and loaded with antioxidants.

HEALTHY CHILI IN SLOW COOKER

Ground chicken or turkey

1 container of cream of organic soup 

1 small can of tomato paste

3 onions 

4 carrots and red peppers

1 can of kidney beans 

1 can of lentils 

2 tb chili power

cumin

teaspoon of garlic

Herbamare sea salt or Himalayan salt and black pepper

Put chicken in a pan with garlic, brown on each side.

Add the mixture into the slow cooker with the tomato soup, tomato paste, chili power, cumin, lentils, carrots, red peppers and kidney beans. 

Cook on low for 6 -8 hours stirring occasionally.

Serve with organic corn chips GMO free or corn chips  and bread of you choice.

HEALTHY ORGANIC TURKEY

SOUP IN SLOW COOKER

If possible use organic

Boil the turkey carcass and bones

2 containers of organic chicken broth, cooked turkey sliced as much as you want

4 large organic carrots 1/2 a head of cauliflower

4 large onions, mushrooms as many as you would like

 sliced into small pieces

1 teaspoon of garlic

2 teaspoons of turmeric

3 teaspoons of basil

4 teaspoons of sage

1 package of chives or to your liking 

Scoop of organic bone broth

​

After boiling the carcass and bones, strain put aside

In a large pan put all the veggies with some avocado oil, garlic, the spices and

salt. Then add the turkey for more flavour with the sea salt or Himalayan and black pepper. 

Now add everything to the broth in the slow cooker and put more chicken broth taste to you liking as you cook for 4 hours or longer if you want on low.  Enjoy!
